Breafast Potato Scramble (Makes About 2 Cups)

1/2 Cup Dehydrated Diced Potatoes
1/4 teaspoon Dried Onion
1/2 teaspoon Dried Bell Peppers
1 teaspoon Butter Powder
1 Package Mountain House Pre-Cooked Scrambled Eggs
Salt & Pepper to taste

At Home: Combine potatoes, onion and bell peppers in a small Ziplock® bag.

At Camp: Put contents of your zip bag in a small container and just cover with hot water. Let sit about 15 minutes until potatoes are tender*. Add the butter powder to the potato mixture and stir to coat. Set aside the potato mixture and prepare the eggs per package instructions (I find the instructions ask for a bit too much water, test it for yourself at home before your trip). When the eggs are ready add the potatoes to the eggs, add salt and pepper to your tastes, stir and enjoy!

*Note: If you don't want to dirty a container or a pan you can soak your potato mixture overnight in the zip bag so the potatoes are tender. Then all you have to do is boil the water and add it to the eggs which has it's own bag. This will keep you from doing any dishes in camp!
